You cannot do free form shapes with the cookie cutter. Bezier curves may do what you want to do.

However, it's unclear from your post what exactly the look is that you're trying to replicate.

It possible that they created the trapezpoid shaped pics in photoshop. Or use many layers and only deformed the the layers with these pics.

You can do masks in ALL imaginable forms and figures with the text generator. Get a font with the shapes you like (most of them can be found free on the net - try highfonts.com for starters). If you have really special needs, you might consider getting a font designer program and do them yourself.
Once you've found your shape, use the text generator to adjust size, placement, colour or alpha of background, colour or alpha of foreground, colour and thickness of outline, colour and feather of shadow. Adjust it all with keyframes as much as you like.
