You use the slider on the track's controls. If you don't want the track at all, you press U to unlink the audio and video and then you press the DEL key to delete the audio track.

i only see a slider on the audio tracks....
my video doesn't have one....

A video track doesn't have audio, the audio track has audio. So if you don't want audio from a particular audio track, you mute it or you remove it. A video track only holds picture info, not sound info.

You have Mute and Solo right next to each other on the Track Header. It's the Circle & Slash and the Exclamation Point. Click on each to see what they do. You can also Right-Click on an audio clip to Mute or Cut just that clip. If it's not Ungrouped from it's video half, it will delete the video, too.
