I'm not sure how well it works with envelope points, but generally holding Ctrl while moving something gives you more fine control.

If you right click on the node, you can type in a value, that way you don't have to move the cursor or the node.

Upon a little experimentation turns out that:

CTRL + mouse movement constrains movement to verticall AND gives greater control.

ALT + mouse movement constrains movment to horizontal and gives greater control.

Are these SoFo/Sony sw engineers great or what!?

Minor correction to the above.

ALT + mouse movement constrains cursor to horizontal movement. It has no affect on control in the way that CTRL + mouse movement does - but this type of control isn't needed on the horizontal axis in volume envelopes.
