...is there any advantage, i.e. quality by rendering and/or preparing my audio in DVD-a with 5.1 surround sound opposed to ac3?

If you are mixing it to surround sound, yes. If not, no.

I'm slightly confused here. Wouldn't you use ac3 for 5.1 surround sound? AC3 can be either stereo or 5.1 so i'm not quite sure what your alternative choice is.
