Pretty much anything by Hauppage (WinTV series) and Pinnacle (Dazzle) will work fine. I've had both and prefer the Hauppage hardware (the higher end ones use a hardware MPEG2 encoder which reduces the load on your system). I hate Hauppage software, but it's just a matter of getting used to it (they're good engineers, but lack finesse in the interface).

Depending on budget the Canopus ADVC-300 or the ADVC-110. These appear as standard firewire DV devices, so long as the operating system can handle that you're good to go with one caveat.
The picture control applet (used to tweak the procamp) that comes with the ADVC-300 seems currently to not work with Win7. Knowing Grass Valley this will be fixed soon.

You might also look into the Blackmagic Design Intensity Pro, it will caputre at a much higher quality than any of the other devices mentioned. It will capture SD via analog composite, S-video, component and digital HDMI and HD at 1280x720-60p or 1920x1080-60i via analog component or digital HDMI. It captures in the full 4:2:2 colorspace in either YUV uncompressed or MJPEG. The files are compatible with Vegas and a heck of a deal for a list price of $199.
