Been running VP9 on Bootcamp with MBP for quite a while now...Both monitors working fine.
Maybe I'm not quite catching your question?

I'm using Bootcamp with Vista Ultimate and two monitors with no (monitor) problems.

Make sure you've got the 2nd monitor enabled in the Nvidia control panel. Works great here. Prefer the Mac side because it automatically sets the highest possible resolution for each monitor.

For some reason I had to manually install the NVIDIA drivers and now it works (oddly though, every time I boot into Vista, the drivers re-install)

right...apple told me (after not telling me in the first place and causing me to install Vista SP1 bootcamp ) that because i installed Vista SP1 and not Vista 0 that is why I had driver issues and the only solution was to find a copy of Vista 0 > install it > install bootcamp 2.1 > and supposedly everything would work perfect....kind of lame since i paid 300 bucks for Vista SP1 and I dont see myself paying another 300 for Vista 0
