This may be a problem with dropping frames while capturing. Capture's Help has a troubleshooting entry that lists three things to try: use a dedicated hard disk, defragment your video capture disk, do not run any other programs during capture. The KB article even says to try running vidcap alone.

Also, some people mistake what they see during capture (which can sometimes look choppy) with the actual capture. The computer sometimes compromises your preview in order to give you a nice, clean captured clip. Play back what you've captured and, if you're still having problems, check out my list of suggestions for streamlining the process:
