When doing the "render as" bit, pick a codec and settings in the drop down boxes on the panel. If you want the finished article to go back to tape, use a DV codec. If you want it to go to DVD, use the MainConcept MPEG-2 codec. Otherwise, use a codec compatible with your target medium.

Go with AVI NTSC-DV, that will be the same quality as when you captured your video (about 13GB / Hour)

Again it all depends on what you want to do with the video in the end. Web streaming, DVD, VCD, all of these things require diffrent foamts, bitrates, screen sizes etc...
