Dual AMD processors and background rendering

I understand that dual processors boost rendering speed a little, but not a really notable amount. How much does a second processor help when doing background renders? I'd love to be able to start a render and keep on editing. That or start a render then do some music with Acid 4. Does the second processor let you work without a background render slowing you down? If it does, then it would help me out immensely.

Also, how is the performance of a dual Xeon compared to a dual AMD? Again, I'm not so much worried about fast rendering time, but more so about being able to background render and continue to edit, and how many software plugins I can run while I'm rendering something in the background.
