The 'best' audio would be uncompressed wave for stereo projects. You can use 64 to 448 kbps inclusive for ac3 audio (both stereo and 5.1).

Have you managed to get a DVD-V to play on a stand alone DVD player, with 24/96 sound? Theoretically, it is possible, but it doesn't seem to work in practice.
