Sorry, no expert advice here. This is completely out of my field of experience.

The couple of times i've ever needed to pull something back of a DVD, i've connected S-Video and stereo audio from my DVD player to my Sony A/V -> DV converter box and then captured DV through firewire. The results have always been more than acceptable, and the process is probably faster than mucking about with VOB and MPEG files.
