Field Monitor RAID configuration

On my field monitor/HDV capture laptop I have three HDD, an 80 and two 100's. I have my OS on the 80 and the two 100s as a RAID 0 for the video. I'm wondering if (despite the increase insecurity of loosing the OS) that I might do better with all three drives under the RAID and then partition it into two virtual disks, one for the OS and one for the video that can be regularly reformatted (as OnLocation advises)? Any knowledgeable thoughts?
