It's a matter of personal preference, there is no better or worse, that's why both algorithms are included on Vegas.

On shots that there is not much movement, blend fields is better. But on the shots that there is extreme motion, interpolation provides a cleaner result (at the cost of vertical resolution). Personally, I prefer interpolation. Others, prefer blend fields.

I always thought that if you were planning for your final project to go to DVD it was better to interpolate, because the TV would respond better to the Interpolate source, and progressive for computer screens, because there are no fields on a monitor.
