The Art and Science of Digital Compositing, by Ron Brinkmann is one of the best, as it's not related specifically to any one software. It does mention Shake from time to time, but it would be hard for it not to, since Ron Brinkmann wrote much of the initial application.
Digital Compositing in Depth by Doug Kelly is a good book, but too tied to specific apps/tasks for most folks.
Angie Taylor's book covers a lot of ground, as does Chris and Trish Meyer's first book.
