This is best asked in the main Vegas Pro forum but the answer is that Vegas doesn't care what graphics card you use. It is purely CPU driven. Most people use dual head cards because editing with two monitors allows you to preview on the second monitor as well as giving you more screen space to work with. Plug-ins like Magic Bullet will use the GPU on the graphics card so that's something to consider if you plan on buying GPU assisted plug-ins but Vegas Pro itself will not use your graphics card's GPU.

I personally prefer NVIDIA because in my experience, ATI has the worst graphics drivers I've ever had the displeasure to install. I will never buy one of their products again. All of my NVIDIA cards have worked great. I'm currently using an older 8600GTS.
