I have mine saved to the C drive. I also make periodic saves to a removable CD. I also USE Excalibur. Excalibur has a simple GUI "Save Emergency Veg" script as part of its huge toolbox of spanners and wrenches! Even I can use!

Ultimate S 2.0 does this (backs up to whereever you specify) and there is a free script on the VASST site that does same. There isn't a means of telling Vegas to save backups anywhere else other than with a script, I'm afraid....Other than doing a "Save As" each time you save. There is also the .bak file that you can usually find for recovery.

When editing I have two folders open, one where the project files are saved and the other, where I want the project folders to be backed up.

Periodically just drag the current project folders to the back up folder on a different machine/drive, works for me

I also save my vegies to the C drive and also to a thumb drive, if it's a very important project. However, I have often wondered if a veg file should actually be saved on your video drive. Can anyone offer a definitive answer?
