Yes, it can be done, but unfortunately (as you already know) not so easy in Vegas, but very very easy in after effects, which is solely designed for tasks such as those.

I however prefer manually adding keyframes in the Vegas Pan/Crop window and then use Vegasaur Tweener to even up and smooth out all keyframe movements & interpolations.

@iEmby This graph editor is not avaliable on the Pan/Crop and Track Motion either
You will see this type of curve editor only VideoFX Window and is very limited

But, you can draw the curve of the interpolation of every keyframe with this script:

It's call Vegas Pro Flow, is an interpolation graph editor between keyframes
