how to capture mono sound

I am atempting to capture an analog 8mm video to disk. The sound on the tape is in mono. How do I set it up so that the captured file has mono sound? Or does it even matter? I think I can set it as mono when I do the render. But should I do it during capture and if so how?

I wouldn't worry about it. True, capturing in stereo will waste about 5.5MB/minute of disk space, but this is just about nothing compared to the 225MB/minute that the combined audio/video uses up. Other than that it makes very little difference.
