Nope. You can make them very thin by collapsing them but you can't hide them.

I would hope the next iteration of Vegas has Folder Tracks, as Acid has had for quite a while.

Folders would be a nice feature for this. Although hiding tracks isn't a bad idea either. I assume that hidden tracks would also be hidden from output (like hiding columns on a spreadsheet).

Well, you can move them to the top or bottom and then scroll them out of sight.

Eh? If i move tracks then I could very well be destroying some very important relationship between them>? Don't you see that? I could have Text that is now obscured by c=video; Child<>Parent relationships being torn asunder and don't get me started in Compositing layers!

Not video tracks, certainly no harm with audio tracks.
