A real-time DV stream is about 30Mb/s. If you're really lucky, you should be able to get about 60 to 90MB/s out of a 100Base-Tx network. So yes, it is possible. I won't guarantee you'll always get good results though. If any other network traffic hits either the capturing computer or the storage computer you'll probably bog down. Whether this will drop frames or cause errors, i don't know.
