New Rig: use IVY and GTX670/680?

I'm a casual user who only does family/friend vid projects + photo editing with CS5 etc etc.

Old PC finally gave out so having a new rig built using specs from other posts. The builder wondered what users find on these items:

* use Sandy i7 3930 or use the new Ivy which are supposed to be more efficient

* use the GTX 570/580 or the new 670/680

* any problems with overclocking?

* Win 7 Pro so can go past the 16GB. I'll probably keep this for 3-4 yrs so inclinded to do this for future products.

different architecture in the new 670/680, doesn't work the same, and so I'd say that you shouldn't rely on it necessarily for working with GPU things for a while. Plus the GK110 chipsets are due out in a few months which will be far more GPGPU friendly with full double floating point precision processing unlike the current GK104 (680/670/etc...) of the Kepler line up which only does single floating point precision processing.
