Noise and Res. Questions

OK - so now I Render my wedding video as Uncompressed .avi and I get three files (count'em!)
two are over 4 gigs and the last one is one is 1.4 - (my fifteen year old son tells me that this is because DVDs can only hold this amount) so obvuiosly I have to throw a LOT of stuff o.u.t. that's OUT. My first questions is how the fruggus do they get hours of video on - say - a rental DVD when these files are only about 45 minutes all together?

Can I use some settings to reduce file size without sacrificing quality?

The second question is when Previewing my sound tracks - own compostions with a guitar, synth etc evrything sounds fine - but after rendering I get the most terrable "topping out" don't know the real term for this - so it just peaks out terrably. I have used Sound Forge to "Normalize2 and Soften plus I reduced the Volume -dB and hope that this will solve that problem - but how will I know in the future if the sound quailty is OK before rendering?

If it's for a DVD render as MPEG-2.

why are you rendering as uncompressed.avi ?
thats 30mgs vs 5mgs for dv.avi

render out as a mpeg2 DVD (streaming )

Just go with the DVD NTSC template (i''l assume you're in the USA)
Then depending on how long your video is adjust the video bitrate as neccesary.
