And have you tried these Motorola (toys look-alike BUT very performant) walkie-talkies with a good mic'ed headset ? That could be an unexpensive solution...

We just use FRS radios from Radio Shack. They have worked very well. We just added headsets and "Push To Talk" buttons.

How do you manage "push to talk" when you have one hand on zoom control and one hand on focus control?

I have one hand on the zoom control - talk with the other hand.

If using auto-focus, it doesn't matter. If using manual focus, I try to focus ahead of time. If using manual focus on something moving toward or away from me, I don't talk during that time. As an alternative, the zoom controller also has focus buttons.

But, yes, there may be some times when you cannot respond immediately.

You can also get VOX (voice activated) headsets for FRS radios.

Our PTT buttons have a switch on the side allowing VOX. Only problem is: In a loud reception area, it wants to be ON all the time.

I know folks who use cellphones. Plans with unlimited mobile-to-mobile minutes.

They use headsets. No PTT necessary.
