Using Sony Vegas 6.0 ...

I adjusted my project settings to 640x480 and my pixel aspect ratio to square.

For Render As, I selected Sony AVC/AAC (*.mp4) and selected the template "QVGA - 896 kbps" - customizing the Video Rendering Quality to Best, and the audio sample rate (Hz) to 41,100. This looked fine and seemed to transfer best when outputted to TV.

The result was an *.mp4 video, check it out...

Also, using Apple iTunes, I loaded the video and added extra information (Artist, Album, etc). I hope this helps you and anyone else who is interested in Sony Vegas videos to iPod videos.

Here's a link to a finished video I made strait from Vegas, I've been using it for video projects ... tried to capture that "generic" introduction like some DVDs have.
