As far as I remember MPEG rendering are among the very few things you can not do in the demo version of Vegas.

Also to render to MPEG2 you need DVDA which gives you the MPEG2 codec (and AC3 audio).

Alternatively you can buy a standalone one such as TMEPEnc and frame serve to it (still doesn't give you AC3 though).
