Yes, VV3 can do Quicktime encoding. Just select 'Render As...' from the file menu and choose Quicktime from the 'Save as type:' drop down. I find it best to render your video at best (DV or MPEG-2) quality, then use Sonic Foundry Batch Encode (Which ships with VV3) to convert to Quicktime or any other format.
