Reason for no "Unlock" on Audio Channel?

As I am no sound engineer, I wish to know is there an actually credible reason why I can't unlock the the relationship between "Left" and "Right" on a stereo channel fader/slider, within "Mixer Console"? I have this on the "Master Fader", yes, but on individual Audio Tracks, no? Why? Sure, I realise I can "split" this channel to 2 and then use faders/sliders on each one of those, now MONO, tracks. But why is it, in everything that is EMI, can't I unlock the relationship at Track Level? After all, I have 2 Meters at TrackLevel leaping about? What's the point of those if I now can't actually, independently, tweak them? Is the philosophy structured to ONLY think of a PAN?

Yes, if it's a stereo pair then all you should be doing to it is adjusting the balance. That's different to panning, that's where you move a mono source within a stereo track or to be more accurate when you pan the sound in the stereo field.
