S-Video is an analog format in which the video is separated into luminance and chroma signals. It requires an analog to digital video converter to create digital video files. Firewire takes the existing digital video from the DV camcorder and simply transfers video data to the hard drive with no loss whatsoever.

Generally speaking, Firewire transfer are much higher quality.

On the other hand, if you're capturing from an analog source and have a high-end converter, there are formats that provide much more quality than DV does.

DV over firewire's single biggest advantage is that it's about the most trouble-free method.
