I know you can do it with a special video card like ATI's All-In-Wonder line. And for some games you can use a program like Camtasia, from www.techsmith.com. It is an application that you start before you run your game. It records the screen into an avi file. It will work with some games, but is really oriented towards the business world. You can download the trial.

You will get the best results from a video card with TV out or a scanconvertor (VGA to Video). The software solutions don't produce high resolution or full frame rate.
