Im trying to figure out how to set up my 5.1 system.

In VV, the Center Channel defaults to 0...If I want to matach my lr ans ls rs which are set at -6 I have to manually knock the center down to -6- even if i "set track properties"

and the LFE gives me know indication if it stays at -6 after I swith to lfe from surround.

LFE is at 0dB in the panner by default, and as you've noticed, there is no changing that. To see what I mean, set your center to +12, then convert it to LFE, then reconvert it to 5.1. It will be reset to 0dB.
If you need to adjust the LFE, you'll do it at the track header or volume envelope.
Regarding your settings, I can't recall if changing this in the internal prefs allows for adjustment or not. I don't believe it does.
Tom Holman has a good book on surround, standards, and setups, and there is always the VASST "Instant Surround" book as well. Either of these will help you get deep into setup, mixing, standards.
