Those little "windows" at the bottom are undockable. Look for a thin gray line to the left (hard to see) Hold down your left mouse and drag it up and away while hovering over it. Once free (undocked) you can resize like any window and move them around.

Some like to have two monitors. You either need a graphic card that supports two or more monitors or two graphic cards. Then you can expand your desktop and drag some stuff to the second monitor. I tired it and it gave me stiff neck. Seriously. To each their own.

Hmm

Well, on my other laptop (software recently installed), the text editor and preview screen has its own window that I can drag around on the screen (over everything else) and minimize by clicking on the larger window behind it or maximize by clicking on the window tab at the bottom (just like if I was using IE)...

I find it much easier to work this way because I can edit text in the hovering screen and view it on the preview at the same time (rather than toggling back and forth)

But for the life of me, I can't figure out how to enable it on this laptop....

You just have to undock the window as a first step. Normally they are 'locked' into their position at the bottom of the work space. If viewed on a smallish low resolution laptop things can be small and rather cluttered. Like I said, you just have to undock the windows one at a time by grabing a hold of the handle (that vertical line) to the left of the window and while holding on to it move the window up and out of its docking area. It may take several tries before you can grab on it to so that it works.
