I've suggested in the past a pausable and resumable render. Adding what you've asked for wouldn't be that much harder, as long as the changes you want to make come after what's been rendered so far.

Clicking the [Cancel] button should bring up a dialog asking if we wish to cancel, pause, save what's rendered so far, make changes, or continue. Right now it just stops the render no matter what, and this is frustrating because it's very easy to accidentally click Cancel. Grrrrrr.

Instead of bouncing the composition to a new track, try using the "Render As" function inside the "File" menu. In this, the Vegas continuously saves the progress of the render, and if the user clicks "cancel", the contents are saved up to that point, leaving a file that is completely usable (unless you're using a funky combination of standards that requires the audio to be rendered before the video). When finished, just bring it back into the timeline. This should suit your needs just fine.
