In the VidCap program, choose Options / Preferences / Disk Management. This will let you set up multiple capture folders on any of your drives, then select which ones will be used for the current capturing session.

I like to create a new unique folder for each project and capture all files to that folder. It makes housekeeping very neat and easy.
