It's sad that I am replying to my own post, but I dug a little deeper on the Zune site and found the following:

which I believe is enough info to start using Vegas to make my videos playable on my Zune.

Pick a different format.
According to the Zune specs, Vegas will do most of it.

Audio

* Windows Media Audio (.wma): All bitrates
* MP3 (.mp3): All bitrates
* AAC (.mp4, .m4a, .m4b, .mov): All bitrates, Low Complexity (LC)

Pictures

* JPEG (.jpg): All resolutions

Video

* Windows Media Video (.wmv): All bitrates and resolutions
* MPEG4 (.mp4, .m4v, .mov): Simple Profile, all bitrates, and resolutions
* H.264 (.mp4, .m4v, .mov): Baseline and Main Profile, all bitrates and resolutions
