Video Graveyard

For those who have been in the business for a while...

I'm curious as to how anyone is integrating non-DV cameras and equipment into the DV workflow. For example, we have a Panasonic AJ-D700 and several old Sony Hi-8 cameras that are rarely being used.

Any suggestions as to the best way to put this equipment to occassional use by converting the output to DV for direct hard drive storage?

There are some circumstances where a big, heavy camera is an asset. How would you do it?

Thanks

I use old cameras, mounted on a tripod, to film wide shots of events like ballet, sports, and weddings. I use the footage for nothing more than cutaways and cover shots, so I always have an out when I make a mistake. The older format's lack of detail is not too noticable on a wide shot. I have to color match the camera, but I have to do that even with identical model Sony DV cameras both white balanced at the same time and location (I still can't figure out why this is the case, but it is).
