Why does Vegas lock-up when I add large TIFF files

I've scanned in a bunch (75) of photographs at 300 - 600 DPI and saved them in TIFF format. That means each file is between 6 and 25 MB.

I can start adding these files to Vegas but after adding 7 or 8 of them it just locks up.

I'm using Vegas v7.0e and my computer is pretty high-end:

Intel C2D E6600 @ 3.0 GHz
2 GB RAM (DDR2-800)
8800 GTX video card
Raptor-X 150 GB hard drive

Does Vegas just not like TIFF files? I don't want to convert them to another format because I'm afraid I will lose quality...

I'm assuming you plan to extreme zooms on the images.
If not, there's no reason to scan at such a large DPI.

No, it doesn't. PNG is the preferred format for Vegas.
TIFFS make a call to Quicktime every time you load one in which, as you've discovered, slows things down considerably.

Convert them to PNG. You won't lose anything. Try one and see.

Should I just open each TIFF in Photoshop and then re-save it as a PNG? Do I need to select any options or are the defaults OK? (eg. so I don't lose any quality)

That's all you have to do.

When you first select Save As and choose PNG, it will add the word copy to the file name. When you click Save, you have the choice of Interlaced or None (i.e. progressive). I always choose None. It's the default anyway.
