Need some advice.

I have just got a new Tv with 5.1 sound, I use Pal dvd template in Vegas, would it be worth me using 5.1 sound for my projects or is it better to stick with stereo.

Best thing to do is play with it and see if it's something you want to do. Some extra work involved, so if it doesn't enhance the project, you're just as well off sticking with stereo. (IMHO)
