DVD format questions.

I am new to DVD creation, and am needing to produce MPEG-2 content in 16:9 DVD format for a new customer. I have not yet filmed the project.

I have done MPEG-2 encoding in the past, but this is an important customer which demands the absolute best quality to ensure additional work. Instead of just rendering as MPEG-2, I'm wondering if I can improve quality during the shooting process. Additionally, I have never dealt with the 16:9 aspect ratio, so I have questions.

I once heard that DVD format is 480p (HD). Does this mean I should shoot in progressive mode when filming? My camera manual says progressive mode is at 30fps, but I image it is more like 29.97fps. My gut instinct says to stick with interlaced video, as motion should be more fluid, and the source will be full of high-speed motion (specifically, the subject will be water sleds).

I also hae an "anamorphic squeeze" mode on my cameras that formats the 16:9 video in a 4:3 frame. Do I simply have to set the aspect to widescreen in the file properties, and select 16:9 output when rendering to create 16:9 files?

Any good resources on DV -> DVD?
