DVD record time seems short + Picture quality not perfect.

I finally burned my first DVD. It even played on my $170 Sony home DVD player with no problems. 2 things, though...
(1) How can Hollywood get 2+ hours of pristine video on one DVD disc, while my software (NeoDVD, which came bundled with the Sony DRU-120A DVD+RW burner) won't let me burn anything close to that much time? I am using DVD+R discs as recommended, which claim "Approximately 2 hours of Video Recording"
(2) The picture on the DVD playback is not as clean as the original DV master. More grainy and noisy of a picture, like the resolution was reduced some. I was expecting no degradation of picture. Are there big differences in the picture quality between MPEG-2 conversion programs? What prgm has the best, cleanest, truest MPEG-2 conversion?
And how do I get "Approximately 2 hours of Video Recording"?

The blank DVDs you are using only hold about 4.7GB. Most any Hollywood movie over about 90 minutes needs more space than this and will use dual layer discs. These are only available to the professional mastering houses right now.

Thanks for the response... What about MPEG-2 conversion? Are there differences from software to software? Or are they all using the same algorithm licensed by the MPEG people? The picture I'm seeing from my DVD is not as clean as the DV master, with quite a few obvious artifacts, especially when there is a lot of movement in the frame. Any revelations here?
