what capture/render formats should I use to get the best quality final project, wiighing all options, including picture quality and smootness?

The capture default is good. When rendering under 'advanced' good is fine, but best is only ok if there's no imperfections otherwise it'll highlight these more.

That depends on what the final media will be. DV tape? DVD?, VCD?, VHS? The best capture format is DV and the best output format is DV tape using the NTSC or PAL DV template (depending on your region).
