How does rendering quality settings affect output video?

There is a setting for rendering quality that
has values between preview and best. However,
it does not explain how each setting affects
the output video. Could someone explain
to me what each setting does.

Along with the question is that I want to have
a faster render duration without affecting the
quality. Currently, at best quality it takes
me over an hour of ~12 min of AVI on a 750Mhz
original Athlon.

My situation is that I have AVI compressed with
PicVideo Mjpeg (the only way I can capture with few
dropped frames and less disk space).

So, if I wanted to only trim and crop and thats
it. No resizing because crop size is the same
size as the output.

And then I render back out to AVI with compressed
PicVideo Mjpeg. I would want the same output
quality as input.

But as stated, it take me a long time using the
best setting. The good setting seems to
wash out the colors more (I think, I may be
wrong).
