When you render the video you should be choosing the "DVD Architect NTSC video stream" template (or PAL or widescreen or 24p, if appropriate). Other than that, you're doing it correctly. Probably the only other audio choice would be PCM (WAV), which would be uncompressed and therefore better quality. However, PCM takes a lot more space on the disc than AC3 does, and PCM doesn't support 5.1 surround.

One thing I do is on the option for the Mpeg 2 video file, I enable the audio so that there is also an audio track added to the Mpeg 2 file. When I make the DVD I still use the separately rendered AC-3 audio file, but I like being able to play the Mpeg 2 file and hear the audio. Also, DVDA can use it in a pinch (rerendering of course), and programs like Roxio or Nero will also use the embedded audio.
