Loss of definition

My video sources are filmed at 60i. When I render to either AVI or MPEG2, I seem to lose clarity in parts of the image that are moving frame to frame, comparing these rendered files to the original. I notice that printed words have lost crisp edges. The whole thing gets worse when I transfer these to DVD using DVD Architech pro 5. I have the capabiltiy to film in 30p or 26p, but have avioded this because pans come out jumpy on the raw DV tape. What else can I do? I have version 9b on VISTA 60bit

You can't use small print/serif letters in DV without crying.

This is due to limitations in the DV codec.

I use a 4:2:2 uncompressed codec for rendering text, even when including 4:1:1 NTSC DV clips.

That makes text look better, but you still have to make it large enough and avoid serifs in anything but larger sizes.
