I am not aware of a custom folder option for a new Take file. By default "Open copy in audio editor" immediately creates a new Take file in the same folder as the original event audio media. As j-v stated, you could 'Save-as' in SF, then delete the 'new take' file and then "Specify a new location or substitute file" when that dialog appears. or just move the new take to a new location and "Specify a new location" that when that dialog appears.
