Recording events for 5.1 mix

Does anybody have any suggestions for recording audio for 5.1 mixing when videotaping weddings, parties, etc.? It seems impossible to take a stereo wav file and mix it effectively into a 5.1 mix that sounds good.

One setup Walter does not suggest is 5 mics in equivalent (average) speaker positions, ie encircling the subject. I would have thought that was the most obvious and technically-correct scenario.

Funny, it did not occur to me until you mentioned it :-) Interestingly, I've never seen that discussed anywhere.

There is a similar thread over in the video section as well.
