Recording mono vs stereo- help a beginner!

I have recently acquired Vegas 2.0. I want to record from multiple sources on separate tracks. I realize that I have 2 options to record and mix down :

1. Record each source into mono first on a separate track. Edit it and add effects. Then finally when ready mix down to single stereo track.
2, Record each source in stereo on a separate track, edit and then mix down to single stereo track.

Can some one explain what are the trade offs of recording either way?

If the source is mono (a single mic or a guitar pickup, for instance), then there is absolutely no benefit in recording it in stereo. All you'll do is use up twice as much hard drive space. When mixing down you can use Pan to place each track where you want it in the stereo field.

If any source is stereo to begin with (L/R out from a keyboard, two mics on a piano, etc.), then recording in stereo will allow you to preserve the original stereo imaging of that source.
