When you render the .avi file you can click the [Custom] button, go to the Audio tab, and remove the checkmark from "Include Audio". This will create a video-only .avi file. Then render the file again to a .wav file to get the audio only.

I don't know the details of the DV spec, but i suspect there's a possibility that an "audioless" DV file will still contain and audio track. The above procedure would simply give you a DV file with silence. You may have to use an AVI codec other than DV in order to get a truly audioless file. But, i'm just guessing.
