in VMS8, is it possible to have photos "fly" past without ever really stopping? I want to have some photos just zoom out slowly and continue zooming out of the pictures but it doesn't appear that you can make either happen as there are no settings to adjust? Or am I looking for a plug-in?

Have you look at the Pan & Crop settings? There's some excellent Sony Vegas Pro Training material online which also applies (mostly) to SMVS. In particular the Pan & Scan techniques tutorial might help you achieve what you are looking to do.
