The following are a couple items people have pointed out that will help you get the Vegas 5 "look" to work for you:

Options | Preferences | Display
Icon color saturation (slider)
Icon color tint (slider)

Options | Preferences | General
Enable Windows XP Theme support (on/off)

Control Panel | Display Properties | Appearance | Advanced | Active Title Bar
(Color gradient affects the title bar color of undocked panels in Vegas)

Control Panel | Display Properties | Appearance | Advanced | [3D Objects / Menu]
Edit the color to Desaturate the default "Warm Grey" that windows comes with. These settings will make Vegas nuetral grey.
