FWIW, re: DVD, I start with the template & customize to suit the video. VBR is cool but not as compatible - be careful of the minimum bitrate.

RE: web or streaming codecs, it used to be std to provide all 3 of the majors, but lately haven't seen that much QT. If I had to pick one, it would be Real or winmedia 9, depending on the video, assuming I didn't already have a lot of content up in one format. Real in my experience tends to provide a softer, smoother background that can work or not, depending on the video.

The Sorenson Pro codec (pay version) is definitely the way to go for QT, though some web or tech purists like the mpg4, mainly IMO because it is mpg4 and less owned. DiVX, Xvid, & mpeg2 are also used quite often. A lot of times the format choice is made based on the server software for streaming content, as most of the current stuff is definitely capable enough.
